Inspired by the TikTok-famous pizza toast, our version starts with thick toasted sourdough bread and either marinara sauce or pesto. The real star of the show comes next. Cottage cheese adds creamy texture and a boost of protein. From there, the pizza toast toppings are up to you! Try classic pizza ingredients like pepperoni, basil, or Parmesan cheese. Or, mix it up with hot honey, sundried tomatoes, or a soft-boiled egg.

When developing this recipe, our testers loved a few different flavor combinations. If using marinara sauce as the base, try topping it with freshly diced tomatoes and torn basil, or keep it classic with mini pepperonis and Parmesan cheese. If you prefer to use pesto, try adding a soft-boiled egg and freshly cracked black pepper, or a drizzle of hot honey and crushed red pepper flakes.

  • Pizza toast is best served immediately after assembling so the bread doesn't get soggy.
  • If using pesto, our recipe testers preferred the flavor of fresh refrigerated basil pesto rather than jarred pesto.
  • If you are not a fan of the texture of cottage cheese but still want ample protein, there's an easy way to create a smooth topping. First blend the cottage cheese in a blender or food processor and then spread on the pizza toast for a smooth, cheesy layer.

Ingredients

  • 1 thick slice sourdough bread, toasted

  • 2 to 3 tablespoons warmed marinara sauce or basil pesto

  • 1/3 cup cottage cheese

  • 2 teaspoons parmesan cheese

  • 1 tablespoon fresh basil torn

  • 1 teaspoon olive oil (good quality)

Other Toppings

  • Chopped sun dried tomatoes in oil

  • Mini pepperoni

  • Hot honey

  • Runny soft boiled egg

  • Flavored olive oils, such as garlic or chile

  • Dried spices, such as red pepper flakes, garlic powder, or oregano

Directions

  1. Top the toasted sourdough bread with marinara sauce or pesto followed by the cottage cheese. Sprinkle on grated Parmesan cheese.

  2. Add your desired pizza toast toppings. Add fresh basil on top. Drizzle with olive oil. Serve immediately.

Test Kitchen Tip: To toast multiple slices of bread at once, preheat the oven to 400ºF. Place the bread slices on a baking tray. Brush olive oil over both sides of the bread. Bake until golden brown and toasted, about 4 to 6 minutes.
