This chicken gnocchi makes cooking in feel like eating out. With onion, celery, carrots, and chicken forming the backbone of this Olive Garden favorite, you'll never know the difference. Flour and half-and-half create the familiar consistency while of sprinkling of Parmesan cheese adds some excitement.

Chicken Gnocchi Soup Ingredients

A few speedy shortcuts help make this chicken soup recipe a weeknight winner. Packaged gnocchi, chicken broth, and rotisserie chicken will help you have this cozy dinner on the table in under an hour. You can find shelf-stable packaged gnocchi alongside the pasta in your grocery store. You can also use frozen gnocchi—simply add them to the soup and cook according to package directions.

How to Customize Copycat Chicken Gnocchi Soup

During our Test Kitchen's taste panel, our recipe testers loved the rich flavor and creamy of our copycat Olive Garden chicken gnocchi soup. The beauty of making this soup at home is that you can customize it to your tastes. If you prefer a thinner soup, swap in milk or more chicken stock. If you'd like a thicker soup, use less broth or cream. This soup is a great base for adding in your favorite vegetables. If you're not a fan of spinach, try using another leafy green like kale, swiss chard, or even collard greens. Try swapping in broccoli, cauliflower, peas, or even bell peppers. Simply add them along with the celery, carrots, and onion. Dig into this chicken gnocchi soup copycat tonight!

Ingredients

  • 2 Tbsp. olive oil

  • 2 tbsp salted butter

  • 1 cup onion, chopped

  • 3 stalks celery, chopped

  • 2 large carrots, shredded

  • 6 cloves garlic, minced

  • ¼ cup flour

  • 2 cups half-and-half

  • 1 (32-oz.) carton chicken stock

  • 1 tsp. garlic powder

  • 1 tsp. onion powder

  • 1 tsp. dried thyme

  • ½ tsp. salt

  • ½  tsp. black pepper

  • 16 ounce package shelf-stable gnocchi

  • 2 cups chopped cooked chicken

  • 2 cups spinach, coarsely chopped

  • cup grated Parmesan cheese

Directions

  1. In a 4- to 5-quart Dutch oven, heat the olive oil and butter over medium heat. Add the onion, celery, and carrots; cook for about 5 minutes or until the vegetables are tender.

  2. Add the garlic and flour; cook for 1 minute more. Stir the mixture to help avoid burning the garlic.

  3. Slowly whisk in the half-and-half until fully incorporated. Cook, stirring constantly, until thickened.

  4. Stir in the chicken stock, garlic powder, onion powder, dried thyme, salt, and pepper. Bring the mixture to a boil.

  5. Stir in the gnocchi, cooked chicken, and spinach. Cook for about 4 minutes or until the gnocchi are fully cooked.

  6. Serve the copycat chicken gnocchi soup in bowls topped with shredded Parmesan cheese, if desired.
