  • 2/3 cup shortbread cookies, such as Lorna Doone (about 12 cookies)

  • 1/3 cup crushed freeze dried strawberries (1/2 oz)

Directions

  1. Preheat oven to 350°F. Grease a 3 qt baking dish.

  2. In a large mixing bowl mix together cake mix, jello, eggs, milk, and vegetable oil. Pour into prepared dish.

  3. Bake for 30 minutes or until a toothpick inserted comes out clean. Cool completely on a wire rack.

  4. Prepare Whipped Topping: Combine cream cheese, powdered sugar, vanilla, and salt in a large bowl. Beat with a mixer on medium to high until combined. Slowly add cream while continuing to beat until mixture thickens to a spreadable consistency. Spread on cooled cake.

  5. Stir together crushed shortbread cookies and strawberries. Sprinkle over Whipped Topping.
