How to Make Banoffee Pie

  1. Make the Crust: Make the graham cracker crust and press it into a tart pan. Bake until golden and cool completely before filling.
  2. Prep the Filling: Slice the bananas and toss them with lemon juice.
  3. Layer in the Filling: Spread dulce de leche in the cooled crust and top with banana slices.
  4. Make the Whipped Cream: Make the homemade whipped cream and spread it over the banana slices. Place in the fridge to chill.
  5. Add Chocolate Shavings: Just before serving, top the banoffee pie with chocolate shavings.

  • Nonstick cooking spray

  • 1/2 cup butter, melted

  • 1/4 cup granulated sugar

  • 1 1/4 cups finely crushed graham crackers (about 10 full cracker sheets)

  • 1/2 teaspoon ground ginger

  • 3 medium bananas, sliced (about 1/3-inch thick)

  • 1 teaspoon lemon juice

  • 1 (13.4) ounce can dulce de leche

  • 1 cup heavy cream

  • 2 tablespoons powdered sugar

  • 1/2 teaspoon vanilla bean paste or vanilla extract

  • Semisweet chocolate shavings

Directions

  1. Preheat oven to 375°F. Lightly coat a 10-inch fluted tart pan with a removable bottom with nonstick spray. In a medium bowl, combine melted butter and granulated sugar. Add crushed graham crackers and ground ginger; toss to mix well. Spread in the prepared tart pan. Press into bottom and sides, forming a firm, smooth layer. Bake 5 minutes or until edges are light brown. Cool in tart pan completely on a wire rack.

  2. In a medium bowl, gently toss together banana slices and lemon juice to coat.

  3. Spread dulce de leche evenly on the bottom of the baked crust. Top with banana slices.

  4. In a medium bowl, beat cream, powdered sugar, and vanilla bean paste until soft peaks form, 2 to 3 minutes. Dollop cream over bananas, spread evenly. Chill 1 to 2 hours before serving or up to 24 hours. Garnish with chocolate shavings before serving.
