When you have leftover mashed potatoes from Thanksgiving or a weeknight dinner, plan to use them in this loaded potato dip recipe. Enjoy with crackers, tortilla chips, and/or crudités.

1 1/2 cups leftover mashed potatoes

8 ounces cream cheese, softened

2 cups shredded cheddar cheese or Colby Jack

1 cup sour cream

6 slices bacon, crisp-cooked and crumbled

1/2 cup green onions, thinly sliced

1 tsp steak seasoning
Directions

Preheat oven to 350ºF. In a large bowl stir together potatoes, cream cheese, 1 cup of the shredded cheddar, ½ cup of the sour cream dip, three of the bacon slices, ¼ cup of the green onions, and the steak seasoning.

Spoon mixture into a 9-inch pie plate or an 8-inch oven-going skillet. Sprinkle with remaining shredded cheddar and bacon. Bake, uncovered, until cheese is melted and dip is heated through, 30 minutes. Spoon the remaining sour cream dip on top and sprinkle with remaining green onions. Serve with crackers, tortilla chips, and/or crudités.
